Egg Dishes & Quiches
1 egg
dash cold water
2 tbsp diced boiled potato
knob of butter
2 tbsp shredded sharp cheddar
pinch of paprika
pinch of salt
chopped chives and/or parsley
Heat a knob of butter in small (4-5") skillet. Add potato, paprika
and salt. Beat 1 large egg and dash of water until foamy. Pour into
skillet and cook over low heat until set on bottom (about 2 minutes).
Sprinkle grated cheese over top and put under broiler for 1 minute or until
lightly golden and puffy. Slide onto serving plate and sprinkle with
freshly chopped herbs. Serves 1
