Filling:
6 cups fresh pitted Flathead Cherries or substitute with any sour cherry
3/4 cup sugar, plus more if cherries are tart
1 teaspoon pure vanilla extract
Biscuit Topping:
1 1/4 cup unbleached all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter
2/3 cup heavy cream
1/2 teaspoon pure vanilla extract
Butter a shallow medium baking dish. Prepare the filling, combining the
ingredients in a mixing bowl. Let sit for about 10 minutes to draw our the
cherry juices. Prepart the biscuit topping, first stirring the flour,
sugar, baking powder and salt together in a food processor. Add the butter
and combine just until a coarse meal forms. Pour in the cream and vanilla.
With a few swift strokes, combine the dough just until it's cohesive and sticky.
Pour the filling into the prepared dish. Drop the topping by heaping
tablespoons over the filling, leaving some of the cherries exposed. Bake
in the center of a 400 degree oven for 30-40 minutes, until the topping is
golden brown. Serve warm.
