Apple-Almond Soufflé

Fruit Dishes
5 apples (about 2 pounds) Golden, Delicious, Cortland, McIntosh or Gravenstein)
peeled, halved and cored
1 teaspoon vanilla extract
1 cup sugar
2 eggs
1/2 teaspoon almond extract
1/4 teaspoon salt
1 cup flour
1/2 cup unsalted butter, melted
1/2 cup finely chopped toasted almonds
Preheat oven to 321 degrees. Butter a 2-quart soufflé dish (such as a
round soufflé dish) Peel, halve and core apples. Cut into 1/2"
cubes. Place apples in dish and toss with vanilla and 2 tablespoons sugar.
In a small bowl beat remaining sugar with eggs, almond extract, salt and flour
and melted butter until smooth. Spread batter evenly over fruit. Bake until the
top is golden and the apples can be pierced easily with a thin , sharp knife for
50 to 60 minutes. Serve warm. Substitute fresh apricots or
nectarines for a change of taste. Guests love this dish! Makes 6-8
servings.
