Artichoke and Red Pepper Souffle

Egg Dishes & Quiches
(serves 10)
1 can (13oz) chopped artichoke hearts
1 can (4oz) chopped black olives
1/2 cup chopped roasted bell peppers (yellow & red)
1 cup cheddar cheese, grated
1 cup jack cheese, grated
6 eggs
1/2 cup bisquick
1/4 cup melted butter
1 cups cottage cheese or ricotta
1/2 tsp baking powder
salt & pepper to taste
Mix together top five ingredients in a large bowl and set aside. Combine
next six ingredients in a cuisinart and blend until smooth. Combine the
two and pour into a greased baking dish. Bake at 400 degrees for 30
minutes or until golden brown. Let stand five minutes before cutting.
Cut into squares and serve hot.
NOTE: You may prepare this dish the night before and refrigerate. Bake the next
day.
