Swedish Nut Cake
2 cups flour 2 eggs
2 cups sugar 1 can (20 oz) undrained crushed pineapple
2 teaspoons baking soda 1 cup chopped walnuts
½ teaspoon salt
TO BE MIXED BY HAND
In large mixing bowl beat eggs until light and fluffy. Add pineapple, flour,
sugar, soda and salt. Mix well by hand. (If you use an electric mixer too much
air gets beaten in and there's a good chance the cake will fall.) Then stir in
walnuts and spread evenly in an ungreased 9x13x2-baking pan. Bake at 350 degrees
for 45-50 minutes or until tooth pick inserted in the middle of the cake comes
out clean. After cake cools frost with cream cheese frosting.
CREAM CHEESE FROSTING
1 8 oz. package cream cheese, softened
¾ stick of margarine or butter, softened
1 teaspoon vanilla
1 ½ cups powered sugar
½ cup chopped walnuts
In small mixing bowl beat together cream cheese, margarine and vanilla. (Use
mixer) Then gradually add the sugar and continue beating until frosting is
smooth. Stir in walnuts. Spread on cake.
