Toasted Garlic Soup

Finely chop 10 large cloves of garlic and sauté lightly in 3 TB of butter until
toasted. Add 8 cups of beef stock (homemade or canned) along with fresh
parsley and simmer for 30 minutes. Add a generous splash of sherry and
serve with croutons and fresh parsley.
Note: Sweet onions that are caramelized can also be added to this recipe
along with a topping of Swiss cheese and a sprinkle of fresh parmesan.
