Cauliflower and Red Peppers with Lemon

Side Dishes
Main Ingredients:
1 large cauliflower
1 large red pepper, roasted and cut into strips
Lemon Dressing Ingredients:
1 tsp white sugar
3/4 tsp salt
1/2 tsp pepper
1 tsp of juice from a fresh lemon
grated rind of one lemon
1 finely chopped onion
2 cloves garlic, minced
1/2 cup olive oil
Directions:
1. In a pot of boiling salted water, cook the cauliflower for approximately 2
minutes. Remove and drain.
2. Wrap the cauliflower in foil and cook, covered on the grill, for 6-8 minutes.
3. Broil red peppers until charred all over. Remove and place in a plastic bag.
Let the pepper steam for 10 minutes, then peel, seed and cut it into strips.
Lemon Dressing
1. Combine all of the ingredients and mix well.
2. Pour over the vegetables and toss well. |
