Hawaiian Granola

Side Dishes
In large mixing bowl combine the following:
8 cups rolled oats
1.5 cups macadamia nuts, halved
1/2 cup sunflower seeds
1/5 cups ribbon coconut
1/4 cup Australian ginger, minced
1/4 cup sesame seeds
mix well
In a smaller bowl combine the following:
2/3 cup maple syrup
2/3 cup safflower oil or canola oil
2 tsp. vanilla
1/8 cup fresh ginger juice*
mix well
In yet a smaller bowl, combine the following:
4 tsp. Cinnamon
2 tsp. Cardomon
1 tsp. sea salt
Pinch ground clove
1/2 cup dry milk powder
mix well
In a small bowl combine the following:
1/2 cup dried pineapple, chopped
1/2 cup dried mango or papaya, chopped
1/2 cup dried blueberries or other berry
set aside
Add the wet ingredients to the large bowl of oats and mix until evenly coated.
Add the spice mix to the large bowl and mix until evenly coated.
Pour granola onto 2 large cookie sheets evenly and as flat as possible (use 3
sheets if they are small)
Bake at 285-300 degrees until golden brown (approximately 30-40 minutes)
Allow granola to cool then pour into a large bowl and add the dried fruits
mixing carefully so as to not break up the granola too much.
Store in a glass jar with airtight lid or in ziplock bags in the refrigerator.
*finely mince a 2 inch piece of fresh ginger. put ginger into blender with
1/8 cup water and blend well. strain contents of blender into a bowl.
