2 each Cucumbers (peeled, seeded & diced)
1 - 1 1/2 Jalapeno Peppers (seeded & diced)
1 each Bell Peppers (seeded & diced)
1 med Yellow Onion (diced)
64 oz Canned Diced Tomatoes with Juice
24 oz Tomato Juice
1 1/2 Tsp Cilantro (chopped)
1 1/2 Tbl Salt
1/2 TSP Black Pepper
1/4 Cup Balsamic Vinegar
2 Tbl Lemon Juice
1 1/2Tbl Tabasco
1 Tbl Worcestershire
Start by pureeing half of the cucumbers, jalapenos, bell peppers and yellow
onion. Pour into a large mixing bowl. Add the remaining diced ingredients
including tomatoes, tomato juice and cilantro. Stir and season with salt,
pepper, vinegar, lemon juice, Tabasco and Worcestershire. Stir and chill. Served
garnished with a cilantro leaf. Makes Approximately 1/2 gallon.
