Buttermilk Cinnamon Bread

4 cups All Purpose Flour
2 tbsps Baking Soda
1 tsp Salt
½ cup Vegetable Oil
2 ½ cups Sugar, Divided
2 cups Buttermilk
2 Large Eggs
1 tbsp Ground Cinnamon
Preheat oven to 350 degrees
In a large mixing bowl, combine the flour, baking soda, and salt. In a
smaller bowl, combine the oil and 1 ½ cups of sugar. Add buttermilk and
eggs, and mix well. Stir into dry ingredients just until moistened.
Fill two greased 8" x 4" x 2" loaf pans about 1/3 full.
Combine cinnamon and remaining cup of sugar, sprinkle half (1/4 of total amount)
over the batter in each loaf pan. Top with remaining batter and remaining
sugar/cinnamon mixture. Swirl batter with a knife.
Bake for 45 - 55 minutes or until toothpick inserted near the center comes out
clean. Cool in pans for 10 minutes before removing. Serve warm.
