4 medium sized potatoes - scrubbed and chopped in small squares - skin on
12 breakfast sausage links (use turkey sausage for a lower fat option) or 1 lb.
ground sausage
2 medium yellow onions - chopped
In large skillet (we use cast iron) brown sausage. Set aside on a plate.
Drain and wipe skillet (do not wash).
Heat skillet to medium and add onions and potatoes. Brown until cooked -
potatoes should be cooked but firm.
Slice breakfast sausage (or crumble ground sausage) and add back to potatoes and
onions.
Cook for 5 minutes. Serve.
Excellent served with an omelet, quiche, cheese tart or pie with chopped
tomatoes as an accompaniment.
