Baked Eggs with Lobster

12 eggs, lightly scrambled
3/4 cup sour cream
4-5 sun dried tomatoes (in oil), chopped
4-5 tblsp fresh basil, chopped
4-5 tblsp scallion, chopped
1-1 ¼ lobster cooked, shelled and coarsely chopped
4-5 oz fontina, shredded
Spray 13”x9”glass baking dish. Add scrambled eggs and “chop” with
spatula to create even base. Dollop with sour cream and spread evenly to cover
eggs. Sprinkle evenly with tomatoes, basil and lobster then top with cheese.
Cover and refrigerate over night. Bake 20 minutes then uncover and bake
until cheese is melted about 10 minutes more. Rest covered about 5 minutes and
cut into squares to serve.
Can use any combination of meats/seafood and cheese. Some combinations we use
are:
- smoked ham, cheddar & scallion
- smoked salmon, jarlsburg/swiss & red onion
