Primrose Coconut "Joys" - 325 oven
1- 14 oz pkg coconut (5 ½ cups)* 2/3 cup sugar 6 tblsp flour
¼ tsp salt 4 egg whites 1 tsp almond extract
8 oz semi-sweet/milk chocolate, melted whole almonds
Mix coconut, sugar, flour and salt in large bowl. Stir in egg whites. Chill
dough for 20-30 minutes. Grease and flour cookie sheet or use parchment paper.
Encase one almond in coconut mixture to form 1" ball. Rinse hands in cold
water, as you go to keep coconut mixture from sticking. Bake about 20 minutes
until lightly browned. Cool completely on wire rack. Dip top of ball in melted
chocolate and cool in fridge until chocolate is set, about 20 minutes. Store in
airtight container. Makes about 3 doz.
*Note: for a less-sweet candy, use ½ unsweetened coconut. Also, try ½ semi and
½ milk chocolate for a richer flavor.
