Honey Mint Scented Cheese

Ingredients:
2 cups whole milk
2 cups half and half
1 teaspoon salt
1/2 cup white vinegar
1 sprig of fresh mint
1 teaspoon honey
Method:
In a 2quart sauce pan, put the milk, half and half , mint and salt. Over
medium high heat, slowly bring the milk to a slow simmer.
Using a thermometer heat the milk until it reaches 200 degrees.
Add the vinegar to the milk and remove from heat. Cover and let sit for 10
minutes. Remove the sprig of mint
After the milk has cooled, strain using cheesecloth and a mesh strainer. Once
the cheese has started to strain add the teaspoon of honey.
Let the cheese strain in the refrigerator for an hour.
Twist the cheese cloth into a ball and let it strain for another 15 minutes.
Remove the cheese from the cheesecloth and place into a separate
container.
Garnish and Presentation:
Place the cheese on a small platter and garnish with fresh herbs. Serve with
sourdough bread and extra virgin olive oil with garlic.
It also goes well with grilled asparagus and tomatoes.
