Spicy Chocolate Chip Zucchini Bread - as served at
Watchtide

Grease your pans - then dust with dark cocoa (not flour)
1 large loaf or 4 small loaves - preheat oven to 350F
3 eggs, 1-1/2 cup Canola oil 1-1/2 cup sugar - 1 tsp. vanilla
2 cups unpeeled raw zucchini - coarse shred
Mix 2 cups flour with 2 tsps baking soda, 1 tsp. baking powder, 1 tsp. salt, 3
tsp. cinnamon; 1 tsp. ground cloves; 1/2 tsp. nutmeg; 1 tsp. allspice. 1
Tablespoon dark cocoa
1 cup chocolate chips and 1 cup nut pieces
cream the eggs, Canola oil, sugar & vanilla.
Add 2 cups unpeeled raw zucchini - blend well
Add the flour & spice mixture to the zucchini mix
Add the nuts and chocolate chips
Pour into greased pan(s) and bake for 1 hour & 10 minutes, or until done. Cool
slightly before removing from pans.
(Some of the chocolate chips will stick to the bottom of the pan - replace them
in the bottom of the bread)
Note: If you break up dark chocolate and use in lieu of the chocolate chips -
it will not stick to the bottom of the pan
ENJOY!
NOTE - THIS WILL KEEP INDEFINITELY IN THE FREEZER - AND HOLDS VERY WELL IN THE
REFRIGERATOR
