Skillets & Casseroles

Ingredients:
1 Pkg. Hash Brown Potatoes
8 Slices Canadian bacon
1 Pkg. Bacon Bits
16 Eggs
4 oz. Mushrooms, sliced
1 ½ cups milk
1 chopped leak
1 ½ tsp. salt
1 tsp vanilla
½ tsp. pepper
½ tsp Rosemary
¼ tsp. thyme
2 cups shredded mozzarella cheese


Cook hash browns until soft cooked, Layer hash browns, mushrooms, leaks, 8 slices Canadian bacon, 1 pkg. Bacon bits and cheese in greased 13X9X2 baking dish. Beat together remaining ingredients and pour over layers. Bake at 400 degrees, for 1-hour until golden brown. 12 servings. May be prepared the night before and baked the next morning.
